Ingredients:

  • 1/2 kg pumpkin pulp
  • 3 dry onions, finely chopped
  • 2 fresh onions, finely chopped
  • 1 bunch of fennel, finely chopped
  • 1 bunch of spearmint, finely chopped
  • 1 bunch of parsley, finely chopped
  • 3-4 tablespoons of flour
  • 2 eggs
  • salt, pepper
  • olive oil

  1. Salt thoroughly the pumpkin and then press it with hands to squeeze out the liquid.
  2. Put the pumpkin and the herbs into a mixing bowl.
  3. Add the rest of the ingredients and mix them all together to make a thick mixture.
  4. Shape the mix into balls, dust them with flour and fry them into plenty of hot oil.
  5. While frying, becareful not to pierce the balls.

Although it is customary to eat pumpkin meatballs as an appetizer, we can also eat them as a main meal, like we did here when we had them for lunch. Of course it’s also a great dinner for everyone. I accompanied them with the aromatic feta dip that we all loved, along with a salad. A cool meal on our plate, ideal for a hot summer day.

  • To grate a kilo of zucchini on the grater you will certainly need half an hour and it is also very tiring.
  • But if you have a food processor with a grater, then use it.
  • If you do it there, you will have your grated zucchini ready in 5 minutes and rested of course.
