Ingredients:

200 gr. of feta cheese
1 handful of spearmint leaves
24 courgette flowers

Batter:

2 cups of all-purpose flour
1 1/2 cup of water
1/2 cup of ouzo
1 1/2 tbsp of olive oil
1 pinch of chili pepper
a little salt

Directions:

  1. Carefully open each flower and remove the stamen.
  2. Wash the flowers and let dry on a cloth or paper towel.
  3. Stuff each flower with a slice of feta cheese and a spearmint leaf.
  4. Gently twist the top of the flowers to secure in the filling, cover with a cloth and put them in the fridge.
  5. In the meanwhile, in a bowl, mix the flour with the liquid materials, add salt and pepper to make smooth batter.
  6. In a saucepan, heat the oil up on medium fire. Dip the flowers into the batter, fry them for 3-4 minutes, making sure you turn them so that they get golden brown on all sides.
  7. Remove from the fire and let them rest on towel paper.

They are tastier when served hot.
