  5. Slowly pour the hot cream into the egg mixture, whisking continuously to prevent the eggs from curdling.
  6. Once the mixture is well combined, strain it through a fine-mesh sieve to remove any lumps or impurities.
  7. Divide the custard among ramekins or oven-safe dishes, filling them about three-quarters full.
  8. Place the ramekins in a deep baking dish. Fill the dish with hot water until it reaches halfway up the sides of the ramekins, creating a water bath.
  9. Carefully transfer the baking dish to the preheated oven and bake for 30-35 minutes or until the custard is set but still slightly jiggly in the center.
  10. Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours, or overnight, to chill and set.
  11. Just before serving, sprinkle a thin layer of granulated sugar over each custard. Use a kitchen torch to caramelize the sugar, creating a crispy and golden crust.
